Lunch yesterday was carrots, daikon radish, and homemade sourdough olive bread dipped in hummus. Delish!
Here are our ideas for converting this batch of ingredients to tasty meals:
- Two different oatmeal recipes – pumpkin (substitute squash) from The Kitchn and carrot cake from Oh She Glows
- Carrot falafel
- Kale and white bean salad
- Roasted squash and black bean salad (substituting sweet potatoes, if you want, and leaving out the spinach or maybe using bok choy or kale)
- Indian carrot salad with lamb from Jamie Oliver c/o Cooking Channel
- Finnish rutabaga pudding from NY Magazine
