Dark Days: Chicken and Parsnips Braised in Hard Cider

We made this for dinner on Saturday, but because we tried out a (delicious) punch recipe with some friends yesterday, we didn’t get around to posting about it…or doing anything else we were supposed to do…until today. Oops! Pretty nice way to spend an afternoon, though.

Braising is one of my favorite Dark Days techniques, because we tend to eat more meat in the winter and I appreciate the extra heat from the oven. . . . → Read More: Dark Days: Chicken and Parsnips Braised in Hard Cider

Dark Days: Polenta with Celeriac and Mushrooms

After a pretty stressful week at work, comfort food was on the menu this weekend. This polenta hit the spot. Dark Days: Crostini with Butternut Squash and Ricotta

It’s also great to be back in my own kitchen!

Lentil and Butternut Squash Chowder

I was shocked by how easy and tasty this meal is.

The hardest part is peeling, seeding, and chopping the butternut squash, which isn’t that hard at all. If you can manage that step, you’ve got this meal. It’s also almost impossible to screw up, which is good since I was doing it on my own (see last week’s pasta that needed to be rescued).

Dark Days: Pasta Marinara

On a recent weeknight we made an awesome and very filling dark days meal: homemade egg pasta with tomato sauce. Now, I have to admit that this is not one of the truly inspired “dark days” meals. We did not get all creative with tubers and root vegetables. We did not invent new ways to use beans and lentils. But on the flip side, look:

We are very lucky that we can get local . . . → Read More: Dark Days: Pasta Marinara
